Devil’s food cake with creamy chocolate filling

Mix → Bake → Cool → Fill

Yield: three 8-inch cake layers · Bake: 350°F for 25–30 minutes · Allow to cool completely.

Cake batter

  • 6 cups (2 lb) 50Express Devil’s Food Cake Mix
  • 2¾ cups water, divided: 1 cup + 1 cup + ¾ cup
  • ½ cup oil

Chocolate filling

50Express Creamy Chocolate Filling: a dollop per sample cube, or 10–12 oz between two cake layers; adjust to taste.

Equipment

Three 8 × 2-inch round Fat Daddio’s pans, nonstick baking spray, mixer with paddle attachment, and spatula. Use the paddle throughout mixing.

  1. Prepare the pans

Preheat the oven to 350°F. Spray three 8 × 2-inch round pans with nonstick baking spray.

  2. Start the batter

Add 1 cup water and 6 cups cake mix to the bowl. Mix on low speed for 3 minutes.

  3. Add water, scrape, and mix

Add 1 cup water. Mix on low for 1 minute. Scrape down the bowl, then mix on medium for 2 minutes.

  4. Finish the batter

Add the remaining ¾ cup water and ½ cup oil. Mix on low for 1 minute. Scrape the bowl, gathering batter toward the center, then mix on low for 2 more minutes.

  5. Bake and cool

Divide the batter evenly among the pans, filling approximately halfway. Bake for 25–30 minutes, or until firm in the middle. Cool completely before filling.

  6. Serve as samples or a layer cake

For samples, cut the cake into cubes and top each with a dollop of chocolate filling. For a two-layer cake, spread 10–12 oz filling between two layers, adjusting to taste. Reserve the third layer for another cake or samples.

Optional: cover and decorate a full cake

Choose one finish: 50Express Buttercream; Pastry Pride, Pastry Pride Premier or Whip N Top whipped topping; Frostin Pride or Whip N Ice whipped icing; Bettercreme; or fondant. Finish with piping, sprinkles, chocolate accents, edible images or toppers. These extras are not required for the sample bites.
