Pecan streusel coffee cake
Bake a soft 50Express Crème Cake with layers of cinnamon-pecan streusel. Follow the recipe from Twins in the Kitchen and shop the supplies below.

Use 2 lb (5½ cups) of mix for this recipe, regardless of package size. The remaining quantities follow the original cup-and-spoon recipe.

Pecan streusel

| All-purpose flour | ¼ cup |
| Ground cinnamon | 1 teaspoon |
| Unsalted butter, melted | 3 tablespoons, plus extra for the pan |
| Pecans | ¾ cup |
Have ready: mixer, mixing bowl, spatula, measuring cups and spoons, and a 9 × 13 × 2-inch Fat Daddio’s pan.
Step-by-step instructions
Prepare the streusel
Combine the brown sugar, flour, cinnamon, melted butter and pecans in a bowl. Mix with a spatula until combined, then set aside.
Start the cake batter
Add the 8 eggs and the measured crème cake mix to the mixing bowl. Mix for 1 minute on low speed to incorporate, then 3 minutes on medium speed.
Add the liquids & flavor
Add the oil, water, vanilla and allspice. Mix for 1 minute on low speed, scrape the bowl, then mix for 3 more minutes on low speed.
Prepare the pan & layer
Brush the 9 × 13 × 2-inch pan with a small amount of melted butter. Pour in half the batter and sprinkle a small amount of streusel over it. Add the remaining batter, then sprinkle the remaining streusel on top.
Bake
Bake in a preheated oven at 350°F for 50–55 minutes, or until firm in the center. Alternative from the Twins recipe: 325°F for 1 hour 10 minutes to 1 hour 25 minutes; begin checking at 1 hour 10 minutes.
