Description

Thumbprint cookies will be made using our 50Express® All-purpose flour, 50Express® fillings; Mango, Lemon, and Blueberry, 50Express® Vanilla extract and ArtePan Butter Vanilla flavoring.

Recipe:
Vanilla Butter Cookie for Thumbprints

Ingredients;
-1 3/4 Cup of 50Express® All-Purpose Flour
-1 tsp. Baking Powder
-1/2 tsp. Salt
-1 1/2 sticks of Unsalted Butter softened (3/4 Cups)
-2/3 Cups of Granulated Sugar plus 3 tablespoons for rolling
-2 Large eggs divided
-1 tsp. Of 50Express® Vanilla
-1 1/2 tsp of artepan mantequilla vanilla flavoring
-1 cup of chopped pecans
-50Express® Fillings; Use the filling of your choice

Procedure;
1. Preheat your oven to 350 degrees Fahrenheit.
2. Line your baking sheets with parchment paper or a silicone mat.
3. In a bowl of a stand mixer fitted with the paddle attachment, cream your softened unsalted butter with your 2/3 cup of granulated sugar for 5 mins at medium high speed until light and fluffy.
4. Stop mixer and scrape down the sides, mix at medium low speed. Add 50Express® Vanilla Extract, ArtePan butter vanilla flavoring and one egg.
5. In a seperate bowl sift together your 50Express® all-purpose flour, baking powder, and salt.
6. Now take your dry ingredient mixture and in two portions add it slowly to your butter and egg mixture. Mix at low speed until fully incorporated.
7. Once dough is ready, take a small ice cream scoop and scoop you dough to form balls. Place them 1 1/2 inches apart on the baking sheets prepared with the parchment paper or silicone mat.
8. Prepare rolling station, in a small container whisk your second egg with 1 tablespoon of water and set it aside.
9. In a small container put the 3 tablespoons of extra granulated sugar and set aside.
10. Take your chopped pecans and put in a container and set aside.
11. Take your cookie dough balls one by one and dip into the egg wash, then roll a few of them in your chopped pecans and some into the granulated sugar.
12. With your thumb, make and indentation in the center of the cookie and fill the pecan rolled cookies with 50Express® blueberry filling, the sugar rolled cookies fill with the 50Express® mango filling and finally the plain cookies fill with the 50Express® lemon filling.
13. Bake at 350 degrees Fahrenheit for 15-18 mins until golden brown on the edges.
14. Let cookies cool.
