PROSEDURES
RED VELVET CAKE MIX
-5 3/4 (2lbs) cups of red velvet mix 50express
-2 1/2 (21.22oz) cups water
-1/2 (3.8oz) cup of water
-Add 1 cup of water and 5 3/4 cups of red velvet mix in a mixing bowl.
-Mix on low speed for 3 minutes
-Once mixed, add 3/4 cup of water. Mix 1 minute on low speed.
-Scrape bowl.
-Mix 2 minutes on medium speed.
-Add 3/4 cup of water and 1/2 cup of oil.
-Mix at low speed for 1 minute.
-Scrape your bowl, then mix on medium for 2 minutes.
BAKING
-Spray 2- 6x2 cake pans with pan spray.
-Fill your cake pan half way with your red velvet cake batter.
-Bake the at 350 degrees for 25-30 minutes or until fully baked from the middle.
- Let them cool down, then remove them from pan. Cut a small piece from the top to make both sides of your cake flat.
-Color buttercreme 3 different colors, princess pink, strawberry red, and chocolate brown.
-Place colored buttercreme in pastry bags with tip.
*Red buttercreme with tip 824
*Pink buttercreme with tip 21
*Brown buttercreme in tipless bag no tip.
-Now place the first layer of cake on top of your 10' gold cake board. Pipe small dots on the outer part of your red velvet cake, using your brown colored buttercreme.
-Fill the inside of your cake with the gourmet cream cheese filling.
-Place the other layer of cake on top.
-Now using your brown buttercreme, start to pipe dots on top of your cake. Make sure to cover the whole top of your cake, starting from the edges going in.
-Take your red buttercreme and make a few small rosette's in the top. Take pink buttercreme and make small swirls and dots on top of your cake. Leaving some space in between your brown buttercreme.
-Now its time to decorate your cake. Place palm leaf, gum paste rose, macaroon, chocolate heart pieces, crispearls, and galaxy dust on top.
WHITE FROZEN CAKE
-Now place the first layer of cake on top of your 8' gold cake board. Pipe small dots on the top of your first layer of cake, using your white buttercreme.
-Place the other layer of cake on top.
-Now using your white buttercreme, start to pipe dots on top of your cake. Make sure to cover the whole top of your cake, starting from the edges going in.
-Take your red buttercreme and make a few small rosette's in the top. Take pink buttercreme and make small swirls and dots on top of your cake. Leaving some space in between your brown buttercreme.
-Now its time to decorate your cake. Place icing pieces, sprinkles, gum paste rose, chocolate heart pieces, bear heart pieces, crispearls, and galaxy dust on top.
-Now your cakes are ready to be cut and enjoyed by friends and family.
