Mini Cheesecakes

• Cream cheese (available in-store)
• Graham cracker crumbs
• Unsalted butter (available in-store)
• 7040- white satin granulated sugar
• 54213- clear vanilla
• 250204- all purpose flour 50express
• 7113- 4 1/2 baking cups
• Muffin pan *
• Red scooper
• Eggs
• Lemon juice
• Sour cream

Ingredients: 

• - 1 cup graham cracker crumbs
• -1/4 cup of melted butter
• -10.5 oz room temperature cream cheese
• -1/2 granulated sugar
• -2 eggs
• -1 tsp vanilla
• -1 tbsp lemon juice
• -1 1/2 tbsp all purpose flour
• -3/4 cup sour cream

Procedures:

1. Melt butter and mix it together with the graham cracker crumbs until it it well combined.
2. Place baking cups in muffin pan. Add small spoon of graham cracker mix and pat down with a spoon. Set aside
3. Using a whisk attachment, Mix cream cheese (at room temperature) and sugar for 2 minutes on medium speed or until well combined and smooth.
4. Add 2 eggs (room temperature). Add eggs one at a time on medium speed for 1 minute. Scrape bowl.
5. Now add clear vanilla, lemon juice, and all purpose flour. Mix well for 2 minutes on medium speed or until smooth. Lastly add sour cream and mix for about 1 minute.
6. -Bake at 325 degrees for 20-25 minutes.
7. - Let them cool for 3-4 hours in refrigerator
