-Using Paddle attachment of a standard mixer, mix together softened butter, large eggs, and vanilla flavor at low speed.
-Gradually add 2 cups of cookie mix at a time and continue mixing ingredients together and increase speed if necessary.
-You will know your dough is ready when it easily pulls away from the side and starts to clump around the paddle of your mixer.
-Roll out your dough evenly with a rolling pin. Cut out cookies using your Easter plungers. Place a pan liner on your cookie sheet and lay cookies on top.
-Bake the cookies for 8-12 minutes at 350 degrees.
-Set them aside to cool down.
-Blend together colored fondant pink, turquoise, and purple with white to lighten the colors. To get more of a pastel colored fondant.
-Place small pieces of different color fondant right next to each other and roll them out using a rolling pin.
-Take your plunger and cut and stamp your fondant.
-Brush on edible glue to your sugar cookie and place fondant piece on top of your cookie. Place them in box and they are ready to be enjoyed.
